Sweden is undergoing something of a culinary revolution, and the ICEHOTEL is far from an exception. In fact, instead of serving exquisite meals in spite of its remote Lapland setting, ingredients from this challenging environment are the centrepiece of the occasion, showcased across eight tasting courses – 12 in winter.

It all begins like any Swedish dinner party, with guests taking off their shoes and mingling over a drink on the cosy verandah. Then, your pair of chefs will invite you to sit down at an intimate wooden table, before preparing your dishes right in front of you. Explaining as they go, it’s a full-evening affair, so expect everything from reindeer tartare and pan-roasted beef to delicate scallops and that Arctic favourite – king crab. Each dish is expertly paired with a beverage from a small-scale producer, with an optional upgrade to alcoholic drinks available.
